Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and slice the cabbage in half vertically, then slice 1-inch thick 'steaks' from one of the halves, ensuring they hold together through the stem.
- In a bowl, combine olive oil, 1/3 cup of grated Parmesan, garlic, salt, pepper, and smoked paprika, then brush both sides of the cabbage steaks with this mixture.
- Using the remaining Parmesan, create piles on the baking sheet—one for each steak (about 1/3 cup per steak)—and place each cabbage steak onto its cheese bed.
- Roast in the oven for 20-25 minutes, or until the cheese is browned and very crisp.
- Before serving, drizzle with balsamic vinegar and sprinkle with fresh parsley, then enjoy immediately.
