- 1 (15 oz) can black beans
- 1 cup shredded cheddar cheese
- ½ cup salsa
- ½ tsp chili powder (or taco seasoning)
- 6 medium flour tortillas
- Cooking spray or butter/oil
Instructions
- Preheat the oven to 425°F and prepare a baking sheet.
- Mash half of the black beans in a bowl, then mix with the remaining beans, cheese, salsa, and chili powder.
- Lay out three tortillas on the baking sheet and spread the bean mixture on them.
- Top with the remaining tortillas to form sandwiches.
- Brush the tops with oil and bake for 15-17 minutes until golden.
- Slice into wedges and serve warm.
Notes
For a crispy texture, make sure to lightly brush the tortillas with oil.
Feel free to substitute with gluten-free tortillas or a different cheese as per preference.
