Description

These crispy black bean quesadillas are a delightful combination of creamy cheese, spiced black beans, and zesty salsa, perfect for a quick dinner or satisfying snack.


Ingredients

  • 1 (15 oz) can black beans
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • ½ tsp chili powder (or taco seasoning)
  • 6 medium flour tortillas
  • Cooking spray or butter/oil

Instructions

  • Preheat the oven to 425°F and prepare a baking sheet.
  • Mash half of the black beans in a bowl, then mix with the remaining beans, cheese, salsa, and chili powder.
  • Lay out three tortillas on the baking sheet and spread the bean mixture on them.
  • Top with the remaining tortillas to form sandwiches.
  • Brush the tops with oil and bake for 15-17 minutes until golden.
  • Slice into wedges and serve warm.

Notes

For a crispy texture, make sure to lightly brush the tortillas with oil.
Feel free to substitute with gluten-free tortillas or a different cheese as per preference.
Experiment with additional fillings like sautéed vegetables for variety.
