Description

Creamy Tuscan Salmon is a delightful dish that features succulent salmon filets in a rich, creamy sauce with sun-dried tomatoes and fresh spinach. It’s a quick yet indulgent meal perfect for any night of the week, pleasing both family and friends with its irresistible flavors.


Ingredients

  • 3 salmon filets (about 1 pound total)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • ½ white onion diced
  • ½ cup sun-dried tomatoes in oil
  • ½ cup cherry tomatoes
  • 1 tablespoon minced garlic
  • 1 cup heavy cream
  • ½ cup freshly shredded parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon italian seasoning
  • 1 cup fresh baby spinach
  • Salt to taste

Instructions

  • Pat the salmon dry with a paper towel and season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned salmon and sear for 3 to 4 minutes per side until golden brown. Remove the salmon and set it aside.
  • In the same pan, add diced onions, sun-dried tomatoes, cherry tomatoes, and minced garlic. Cook for 5 minutes until fragrant and softened.
  • Stir in the heavy cream, Parmesan cheese, paprika, and Italian seasoning. Lower the heat and add the fresh baby spinach, allowing the sauce to simmer until the spinach is wilted. Adjust salt to taste.
  • Return the salmon to the pan and let it simmer for another 5 to 10 minutes until fully cooked.

Notes

Feel free to add more vegetables like bell peppers or zucchini for additional flavor.
Serve with a side of pasta or crusty bread to soak up the creamy sauce.
Leftovers can be stored in the fridge for up to 2 days and reheated gently.
