Description

This creamy spinach and mushroom gnocchi is a delightful dish that brings together the rich flavors of garlic and mushrooms in a luscious sauce, perfect for a comforting dinner in under 20 minutes.


Ingredients

  • 1 tablespoon olive oil
  • 8 oz mushrooms (crimini)
  • Salt and pepper
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • ½ teaspoon Italian seasoning (or Herbs from Provence)
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt (to taste)
  • Coarsely ground black pepper (to taste)
  • Red pepper flakes (to taste)

Instructions

  • Sauté the mushrooms in olive oil with salt and pepper until browned.
  • Remove some mushrooms from the skillet and keep aside.
  • Add gnocchi, chicken broth, cream, garlic, Italian seasoning, smoked paprika, and salt to the skillet. Boil gently while covered for 5 minutes.
  • Stir in spinach and cook until wilted, adjusting the sauce thickness as desired.
  • Season the dish and top with reserved mushrooms before serving.

Notes

Store leftovers in an airtight container for up to 3 days.
For a creamier sauce when reheating, add a splash of cream or broth.
Consider adding freshly grated Parmesan cheese for extra flavor.
