- 1 ½ lb. boneless, skinless chicken breasts
- 1 ½ tbsp olive oil
- 1 ½ tsp Italian seasoning
- ½ tsp onion powder
- 3–4 minced garlic cloves
- 1 cup uncooked orzo
- 2 ¼ cups chicken broth
- 6–8 oz cubed cream cheese
- 12 oz cherry tomatoes
- a couple of handfuls of baby spinach
- ¼ cup freshly grated Parmesan cheese
- 1–2 tbsp heavy cream (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
- Season chicken cubes with olive oil, Italian seasoning, onion powder, salt, and pepper.
- Stir in uncooked orzo and chicken broth, mixing gently.
- Layer minced garlic, cherry tomatoes, and baby spinach over orzo mixture.
- Add cubed cream cheese throughout the mixture.
- Cover with foil and bake for 30 minutes, then uncover and add Parmesan cheese for the last 10 minutes.
- Once cooked, stir gently, adding cream if desired, and serve warm.
Notes
The dish can be made with chicken thighs for extra flavor.
