- 1 tsp garlic minced
- 1 cup heavy whipping cream
- 1 cup half and half
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups freshly grated parmesan cheese
- up to 1/4 cup hot milk (optional) or pasta water
- 1 pkg fettuccine noodles – cooked to package directions
- freshly chopped parsley for garnish
Instructions
- Melt the butter in a large skillet over medium high heat and add the minced garlic. Let simmer for just a minute.
- Stir in the cream and half and half, whisking until fully incorporated, then bring to a gentle simmer.
- Add the Italian seasoning, salt, and pepper, whisking to combine.
- Incorporate the Parmesan cheese, stirring until it melts completely into the sauce, avoiding stringiness.
- If needed, whisk in small amounts of hot milk or pasta water to achieve desired sauce consistency.
- Combine the finished sauce with cooked fettuccine noodles and garnish with parsley if preferred.
Notes
For a thinner sauce, add more pasta water or hot milk.
Make sure to use freshly grated Parmesan for the best flavor and texture.
Garnish with extra cheese if desired.
