- 2 tablespoons extra virgin olive oil (divided)
- 1 yellow onion (finely diced)
- 8 ounces brown mushrooms (sliced)
- 3 garlic cloves (minced)
- 10.5 ounces cream of mushroom soup
- 1/2 cup beef broth
- 1/4 cup fresh parsley (finely chopped, optional garnish)
Instructions
- Season pork chops with salt and pepper.
- Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear pork chops for 3-4 minutes on each side until golden brown.
- Remove pork chops from skillet and set aside.
- Add remaining olive oil to the skillet, then sauté onions and mushrooms for 4 minutes until soft.
- Stir in garlic and cook for an additional minute until fragrant.
- Add cream of mushroom soup and beef broth to the skillet, stirring until combined; bring to simmer.
- Return pork chops to skillet, cover with sauce, and simmer for 5 minutes until cooked through.
Notes
Let pork chops rest after searing to keep them tender.
For thicker sauce, simmer without pork before returning it to the skillet.
