Description

This Cranberry Apple Walnut Stuffing combines tart cranberries, sweet apples, and crunchy walnuts for a flavor-packed dish that’s perfect for family gatherings and cozy dinners.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large onion, chopped
  • 1 apple, diced
  • 2 cloves garlic, minced
  • 2 tablespoons rosemary, chopped
  • 1 loaf cranberry walnut bread, cut into 1-inch cubes
  • 1 egg
  • 1/3 cup heavy cream
  • 1/2 cup chicken stock
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • Olive oil spray or cooking spray

Instructions

  • Preheat the oven to 375°F and grease a 2-quart baking dish with cooking spray.
  • In a large pan, heat olive oil over medium-high heat, sauté onions until translucent (5-7 minutes), add apples and cook until softened (3-5 minutes), then add garlic and rosemary, cooking for another minute.
  • In a large mixing bowl, combine bread cubes with the sautéed mixture.
  • In another bowl, whisk together egg, heavy cream, chicken stock, salt, and pepper; pour over bread mixture and mix well.
  • Transfer mixture to the greased baking dish, spritz the top with olive oil, and bake for about 30 minutes until golden brown and crispy. Let cool before serving.

Notes

For a gluten-free option, substitute with gluten-free bread and ensure you use gluten-free broth.
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
For added crunch, broil the stuffing for the last 2-3 minutes of baking.
