This Cranberry Apple Walnut Stuffing combines tart cranberries, sweet apples, and crunchy walnuts for a flavor-packed dish that’s perfect for family gatherings and cozy dinners.

- 1 tablespoon extra virgin olive oil
- 1 large onion, chopped
- 1 apple, diced
- 2 cloves garlic, minced
- 2 tablespoons rosemary, chopped
- 1 loaf cranberry walnut bread, cut into 1-inch cubes
- 1 egg
- 1/3 cup heavy cream
- 1/2 cup chicken stock
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon freshly ground black pepper
- Olive oil spray or cooking spray
Instructions
- Preheat the oven to 375°F and grease a 2-quart baking dish with cooking spray.
- In a large pan, heat olive oil over medium-high heat, sauté onions until translucent (5-7 minutes), add apples and cook until softened (3-5 minutes), then add garlic and rosemary, cooking for another minute.
- In a large mixing bowl, combine bread cubes with the sautéed mixture.
- In another bowl, whisk together egg, heavy cream, chicken stock, salt, and pepper; pour over bread mixture and mix well.
- Transfer mixture to the greased baking dish, spritz the top with olive oil, and bake for about 30 minutes until golden brown and crispy. Let cool before serving.
Notes
For a gluten-free option, substitute with gluten-free bread and ensure you use gluten-free broth.
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
For added crunch, broil the stuffing for the last 2-3 minutes of baking.
