  • Roma tomatoes (4 large, seeded and diced)
  • Red onion (½, diced)
  • Black beans (15 oz can, rinsed and drained)
  • Black-eyed peas (15 oz can, rinsed and drained)
  • Frozen corn kernels (10 oz package, thawed)
  • Green bell pepper (1, seeded and diced)
  • Jalapeños (1-2, seeded and diced)
  • Cilantro (1 bunch, chopped)
  • Olive oil (⅓ cup)
  • White wine vinegar (1 tablespoon)
  • Granulated sugar (1 tablespoon)
  • Lime (1, juiced)
  • Chili powder (½ teaspoon)
  • Garlic powder (¼ teaspoon)
  • Cayenne pepper (¼ teaspoon optional)
  • Salt and pepper to taste

Instructions

  • Whisk together olive oil, vinegar, sugar, lime juice, chili powder, garlic powder, and cayenne until smooth.
  • Combine Roma tomatoes, red onion, black beans, black-eyed peas, corn, green bell pepper, jalapeños, and cilantro in a large bowl.
