Description

These Cottage Cheese Brownies are a delicious and healthy twist on a classic dessert. With simple ingredients like blended cottage cheese, almond flour, and cacao powder, they offer a fudgy texture and rich flavor, perfect for a delightful snack or a guilt-free treat.

Ingredients

Scale
  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it.
  2. Blend the cottage cheese until smooth and set aside.
  3. In a mixing bowl, whisk eggs, vanilla extract, coconut sugar, and maple syrup together, then mix in the blended cottage cheese.
  4. Combine almond flour, cacao powder, and baking soda into the mixture, stirring until smooth.
  5. Gently fold in chocolate chips, reserving some for topping if desired.
  6. Pour the brownie batter into the baking dish, spreading it evenly and sprinkle with remaining chocolate chips.
  7. Bake for 24–26 minutes or until a toothpick inserted comes out mostly clean but with some moist crumbs for a fudgy texture.
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing.

Notes

For a richer flavor, use high-quality cacao powder.
Adjust the sweetener to your taste; honey can be a substitute for maple syrup.
These brownies can be stored in an airtight container for up to a week.
