Instructions
- Preheat your oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray.
- Blend together the cottage cheese, eggs, vanilla extract, maple syrup, and sugar on high speed until smooth for 60-90 seconds.
- In a separate bowl, whisk the almond flour, cocoa powder, baking soda, and salt together to incorporate air.
- Combine the wet mixture into the dry ingredients and fold gently until just mixed. Avoid overmixing to maintain a tender texture.
- Fold in the chocolate chips and pour the batter into the prepared baking dish, spreading evenly. Optionally, reserve some chocolate chips for the top.
