  • 1/4 cup cocoa powder
  • 1/4 tsp baking soda
  • 1 pinch of salt
  • 1/3 cup chocolate chips

Instructions

  • Preheat your oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray.
  • Blend together the cottage cheese, eggs, vanilla extract, maple syrup, and sugar on high speed until smooth for 60-90 seconds.
  • In a separate bowl, whisk the almond flour, cocoa powder, baking soda, and salt together to incorporate air.
  • Combine the wet mixture into the dry ingredients and fold gently until just mixed. Avoid overmixing to maintain a tender texture.
  • Fold in the chocolate chips and pour the batter into the prepared baking dish, spreading evenly. Optionally, reserve some chocolate chips for the top.
  • Bake for 18-22 minutes until the top is set and a toothpick inserted in the center yields moist crumbs. Allow to cool for 5 minutes before cutting into squares.
