- 6 ounces bacon, cut into 1 inch pieces
- 1 pound pork sausage
- 2 large potatoes, peeled and cut into bite sized pieces
- 2 large onions, sliced
- 3 cups beef broth (or chicken broth)
- salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
- In a large saucepan, cook the bacon until crisp. Set aside, reserving 2 tablespoons of the bacon grease in the pan.
- Brown the sausage in the reserved bacon grease on all sides and then set aside.
- Add sliced onions to the saucepan and cook until tender.
- Layer the potatoes over the onions, then add back the bacon and sausage. Pour in the broth, bringing the mixture to a boil.
- Reduce the heat to a simmer, cover, and cook for 2 hours.
- Season with salt and pepper, stir in parsley, and serve.
Notes
For added flavor, use a combination of beef and chicken broth.
Feel free to include other vegetables such as carrots or celery for extra nutrition.
