Description
This Classic Spaghetti Bolognese is a family favorite that combines minced beef with ripe tomatoes and herbs. Perfect for a quick dinner or healthy meal, its robust flavors make it an ideal comfort food for all occasions.

- 1 tbsp olive oil
- 1 onion peeled and finely diced
- 2 cloves garlic peeled and minced
- 1 carrot peeled and finely diced
- 3 chestnut mushrooms finely diced
- 450 g (1 lb) minced beef (ground beef)
- 120 ml (1/2 cup) red wine
- 3 tbsp tomato puree
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 tbsp worcestershire sauce
- 1 beef stock cube crumbled
- 2 x 400 g (2 x 14 oz) tins finely chopped tomatoes
- ½ tbsp light brown sugar
- ½ tsp salt
- ½ tsp black pepper
- 300 g (10.5 oz) dried spaghetti or fresh pasta
- small bunch spring onions (scallions) chopped
- grated parmesan
Instructions
- Heat the oil in a frying pan over medium-high heat and add the onion, cooking for 5 minutes until softened.
- Add the minced garlic and cook for an additional minute.
- Stir in the diced carrot and mushrooms; cook for an extra 2-3 minutes.
- Add the minced beef and cook for 5-6 minutes or until browned, breaking up chunks of meat with a spatula.
- Pour in the red wine, bring to a boil, and let it bubble for 2-3 minutes until reduced significantly.
- Incorporate the tomato puree, oregano, thyme, Worcestershire sauce, crumbled beef stock cube, chopped tomatoes, brown sugar, salt, and black pepper. Bring back to a boil, then reduce heat and let simmer for 15-20 minutes until thickened.
- In another pot, boil salted water and add the spaghetti, cooking for 10-12 minutes until al dente.
- Drain the spaghetti and portion into 4 bowls.
- Top each bowl of spaghetti with the Bolognese sauce and garnish with chopped spring onions and grated parmesan.
Notes
Feel free to adjust the minced beef quantity based on package sizes available at your store.
Serve with a side salad or garlic bread for a complete meal.
Leftover Bolognese can be refrigerated and tastes even better the next day.
