Description

Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 garlic cloves, minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice
  • 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)

Instructions

  • Preheat your oven to 200°C/390°F.
  • In a large bowl, combine cauliflower florets and olive oil, adding minced garlic and mixing well to coat the cauliflower.
  • Sprinkle chipotle powder, salt, and black pepper over the mixture, then toss to ensure even distribution.
  • Spread the seasoned cauliflower on a baking tray in a single layer and bake for 25 minutes, turning once for caramelization.
  • Once done, remove from the oven and drizzle with lime juice before serving.
  • Garnish with coriander or your choice of herbs, then serve hot.
