- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice
- 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)
Instructions
- Preheat your oven to 200°C/390°F.
- In a large bowl, combine cauliflower florets and olive oil, adding minced garlic and mixing well to coat the cauliflower.
- Sprinkle chipotle powder, salt, and black pepper over the mixture, then toss to ensure even distribution.
- Spread the seasoned cauliflower on a baking tray in a single layer and bake for 25 minutes, turning once for caramelization.
- Once done, remove from the oven and drizzle with lime juice before serving.
- Garnish with coriander or your choice of herbs, then serve hot.
