- 1 onion (chopped)
- 5 carrots (chopped)
- 5 celery stalks (chopped)
- 1 cup wild rice
- 3 cups chicken broth
- 1 lb chicken breasts (cut into small pieces)
- 10 tablespoons butter (divided)
- 1 teaspoon salt
- 1/2 teaspoon poultry seasoning
- 4 tablespoons flour
- 2 cups milk
- 3–4 cups bread (cubed)
- Salt, pepper, or fresh parsley (for garnish)
Instructions
- Preheat oven to 350°F and combine onion, carrots, celery, wild rice, and chicken broth in a baking dish. Cover with foil and bake for 1 hour and 15 minutes.
- While baking, melt 4 tablespoons butter in a saucepan. Add flour, salt, and poultry seasoning to create roux, then whisk in milk until smooth.
- Melt remaining 6 tablespoons butter and coat cubed bread to create topping.
- After rice is cooked, mix in chicken pieces and creamy sauce. Top with buttered bread cubes.
- Increase oven to 450°F, bake uncovered for 20-30 minutes until chicken is cooked and topping is golden brown. Let rest before serving.
Notes
For a lighter option, consider using rotisserie chicken or turkey.
Gluten-free bread can be used for dietary preferences.
