Ingredients
- Boneless, skinless chicken breasts
- Olive oil
- Garlic (fresh, minced)
- Dried thyme, oregano, and basil
- Salt and black pepper
- Fresh spinach
- Mushrooms (button or cremini)
- Butter
- Cream cheese (softened)
- Heavy cream
- Parmesan cheese (freshly grated)
- Chicken broth
Instructions
- Preheat oven to 375°F (190°C). Season chicken on both sides with salt, pepper, thyme, oregano, and basil.
- Heat olive oil in a skillet; sear chicken breasts for 2-3 minutes on each side until golden brown. Set aside.
- In the same skillet, melt butter and sauté sliced mushrooms and garlic for 5-7 minutes until browned.
- Add spinach and cook for 2-3 minutes until wilted.
- Whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth; season to taste.
- Combine mushroom-spinach mix in a baking dish, add chicken on top, and pour creamy sauce over.
- Bake uncovered for 20-25 minutes or until chicken reaches 165°F (74°C); broil if desired for a crispy top.
- Allow to rest for 5 minutes before serving.
Notes
Chicken thighs can be substituted if preferred for more juiciness.
