Description

This Chicken Spinach Mushroom Low Carb Oven Dish combines juicy chicken, tender mushrooms, and healthy spinach in a creamy sauce, making it perfect for quick dinners or meal prep.


Ingredients

  • Boneless, skinless chicken breasts
  • Olive oil
  • Garlic (fresh, minced)
  • Dried thyme, oregano, and basil
  • Salt and black pepper
  • Fresh spinach
  • Mushrooms (button or cremini)
  • Butter
  • Cream cheese (softened)
  • Heavy cream
  • Parmesan cheese (freshly grated)
  • Chicken broth

Instructions

  • Preheat oven to 375°F (190°C). Season chicken on both sides with salt, pepper, thyme, oregano, and basil.
  • Heat olive oil in a skillet; sear chicken breasts for 2-3 minutes on each side until golden brown. Set aside.
  • In the same skillet, melt butter and sauté sliced mushrooms and garlic for 5-7 minutes until browned.
  • Add spinach and cook for 2-3 minutes until wilted.
  • Whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth; season to taste.
  • Combine mushroom-spinach mix in a baking dish, add chicken on top, and pour creamy sauce over.
  • Bake uncovered for 20-25 minutes or until chicken reaches 165°F (74°C); broil if desired for a crispy top.
  • Allow to rest for 5 minutes before serving.

Notes

Chicken thighs can be substituted if preferred for more juiciness.
Adjust herbs and spices to taste depending on personal preference.
This dish can be prepared ahead of time and left in the fridge overnight before baking.
