- 2 lbs ground chicken
- 1 egg
- 1 tsp dried oregano
- 1 tbsp fresh mint, chopped
- 1 tsp garlic powder
- 3/4 cup Panko breadcrumbs
- 1 cup feta cheese, crumbled
- 1 tbsp olive oil
- 1/3 cup grated cucumber
- 1 cup plain Greek yogurt
- juice of half a lemon
- salt to taste
Instructions
- Mix ground chicken, egg, oregano, mint, garlic powder, breadcrumbs, feta, and salt in a bowl.
- Form mixture into 24-25 meatballs.
- Preheat oven to 400°F and heat olive oil in a frying pan.
- Brown meatballs for 3-4 minutes until golden.
- Transfer to a baking sheet and bake for 8-10 minutes until cooked through.
- Prepare tzatziki by mixing yogurt, drained cucumber, mint, lemon juice, and salt.
- Serve meatballs with tzatziki dip.
Notes
If mixture is too wet, add more Panko.
Use room temperature egg for better binding.
Allow tzatziki to rest for flavors to meld.
