- 1 teaspoon baking soda
- 1 and 1/2 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup (12 Tbsp; 170g) unsalted butter, melted
- 1 and 1/4 cups (250g) brown sugar, packed
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1/3 cup (67g) granulated sugar, for rolling
Instructions
- Preheat oven to 325°F (163°C).
- Whisk dry ingredients together: flour, baking soda, cornstarch, cinnamon, and salt.
- Melt butter and whisk in brown sugar, egg, and vanilla until smooth.
- Combine wet mixture with dry ingredients, mixing until just combined.
- Cover and chill dough for 3–4 hours in the refrigerator.
- Scoop dough and roll into balls, then coat in granulated sugar.
- Place on lined baking sheets, spaced apart, and bake for 14–16 minutes.
- Cool on baking sheets for 10 minutes, then transfer to a wire rack.
Notes
For gluten-free cookies, substitute with gluten-free flour.
Chilling the dough is essential for achieving the right texture.
Measure flour by spooning it into the cup to avoid packing.
