Description

Ingredients

  • All-Purpose Flour (1¾ cups)
  • Granulated Sugar (1½ cups)
  • Cocoa Powder (¾ cup)
  • Baking Powder (1½ tsp)
  • Baking Soda (1½ tsp)
  • Salt (1 tsp)
  • Eggs (2 large)
  • Whole Milk (1 cup)
  • Vegetable Oil (½ cup)
  • Vanilla Extract (2 tsp)
  • Heavy Cream (2½ cups)
  • Icing Sugar (½ cup)
  • Brandy (2 tbsp)
  • Vanilla Bean (1)
  • Gelatin (3 tsp)
  • Cherries from Amarena Cherry Conserve (1 cup, chopped)
  • Amarena Cherry Syrup (¼ cup)
  • Dark Chocolate (¾ cup)
  • Fresh Cherries (8)

Instructions

  • Preheat oven to 350°F (180°C) and prepare two 8-inch round cake pans.
  • Mix dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, salt.
  • In a separate bowl, whisk eggs, milk, oil, and vanilla; combine with dry ingredients.
  • Pour batter into prepared pans; bake for 30 minutes and cool on wire rack.
  • Dissolve gelatin in cold water and microwave to prepare.
  • Beat cream with icing sugar and vanilla bean; fold in gelatin mixture to stabilize.
  • Slice cooled cake layers and brush with cherry syrup; layer with cream and cherries.
  • Frost cake with whipped cream and prepare ganache with chocolate and cream.
  • Drizzle ganache on frosted cake and decorate with chocolate and fresh cherries.
  • Chill to set for a couple of hours before serving.

Notes

For vegan, consider flax eggs as substitutes for eggs.
