Ingredients

  • 2 lb. fresh green beans
  • Kosher salt
  • 2 Tbsp. extra virgin olive oil
  • 1 lb. crimini mushrooms
  • 6 Tbsp. unsalted butter
  • 4 large sprigs thyme
  • 2 Tbsp. all-purpose flour
  • 1¼ cups whole milk
  • 1 cup heavy cream
  • 4 garlic cloves
  • ½ cup grated Parmesan
  • Freshly ground black pepper
  • ¾ cup French's fried onions

Instructions

  • Preheat the oven to 375°F and prepare a pot of salted boiling water for blanching the green beans.
  • Blanch the green beans for about 3 minutes, drain, and cool them down.
  • Sauté the sliced crimini mushrooms until golden, then set aside.
  • Make the cream sauce by mixing melted butter with flour, then stirring in milk and cream until thickened. Add garlic and Parmesan.
  • Combine the green beans and mushrooms in a baking dish, pour over the cream sauce, cover with foil, and bake for 25-30 minutes.
  • Uncover, top with fried onions, and bake for an additional 3 minutes. Let sit before serving.

For a gluten-free option, use cornstarch in place of all-purpose flour.
