  • 8 chicken thighs (bone-in, skin-on)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  • Preheat your oven to 425°F (220°C). Allow the chicken thighs to reach room temperature and pat dry with a paper towel.
  • In a small bowl, combine all the herbs and spices to create the seasoning mix.
  • In a large mixing bowl, toss the chicken thighs with the olive oil and two-thirds of the seasoning blend, ensuring they are well-coated and seasoning is applied under the skin.
  • Place the seasoned chicken on a rack over a baking sheet and sprinkle the remaining seasoning on top.
  • Bake for 35 to 40 minutes until the internal temperature reaches 170°F. Optionally, broil for an additional 2-3 minutes for extra crispiness. Let the chicken rest for 5 minutes before serving.
