- 1 pound thick-cut bacon

- 2 large shallots, diced
- 2 teaspoons garlic, minced
- ½ cup light brown sugar, packed
- ¼ cup maple syrup
- ⅓ cup apple cider vinegar
- 1 teaspoon chili powder (optional)
Instructions
- Preheat your oven to 450°F and line a baking sheet with parchment paper.
- Arrange cleaned Brussels sprouts cut-side down on the baking sheet, drizzle with oil, salt, and pepper, and toss to coat.
- Roast Brussels sprouts for 20-25 minutes until tender and golden brown.
- Meanwhile, cook diced bacon in a skillet over medium heat until crispy, about 8-10 minutes, then drain.
- In the same skillet, caramelize onions and shallots in bacon grease over medium-low heat for 15-20 minutes.
- Stir in garlic, brown sugar, maple syrup, apple cider vinegar, and cooked bacon, simmering for 5 minutes.
- Add roasted Brussels sprouts to the skillet and toss gently to coat before serving.

Ensure Brussels sprouts have space on the baking sheet for optimal crispiness.
Use room temperature bacon for even cooking and crispiness.
If bacon jam is too thick, add a splash of water to loosen it.
