  • 20 oz (1 ¼ lbs) boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  • Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
  • Place the chicken in a bowl and sprinkle with flour, basil, paprika, oregano, salt, and pepper. Toss to coat all pieces well.
  • Heat a large cast iron skillet over medium-high heat. Add olive oil and 1 tbsp butter. Once hot, add chicken pieces in a single layer.
  • Cook the chicken for about 3 minutes without moving. Flip and cook for another 2 minutes until golden and cooked through.
  • Add the remaining butter, minced garlic, and parsley to the pan. Cook for an additional minute until the chicken is fully cooked and coated with garlic butter.
  • Serve hot, alone or with your choice of sides like rice, pasta, or a fresh salad.
